Bollini Pinot Grigio is styled to show intense varietal aromas with a fragrant bouquet and elegant, fruity, floral flavors. The difference between daytime and nighttime temperatures helps create wines that are remarkably fresh and robust in aroma and flavor. Production begins with an immediate pressing of the fruit followed by cold settling. Vinification is carried out at low temperatures in stainless steel tanks to preserve the fresh varietal character of the fruit.

Harvest Note
Winter saw lower-than-average temperatures and precipitation. Spring was cooler than it has been in years, which caused a delay in budbreak. But mild temperatures in May brought everything ten days up. Flowering took place in a mild period, which didn’t see any rain, guaranteeing excellent fruit set. June and July saw higher-than-average temps and little rain, which raised a few alarms. However, late-summer rains alleviated any cause for concern. The Pinot Grigio harvest began slightly earlier than the average of the last few years. The grapes were perfectly healthy, with sugar levels slightly higher than usual. The medium-high extract favored “round” wines, with excellent balance between the acidity and the alcohol and intense and complex notes of white-fleshed fruit.
Tasting Note
Straw yellow in color, clear-cut and delicate on the nose, with scents of acacia flowers, minerals and pear. The fresh natural acidity supports the wine.
Food Pairing
Excellent as an aperitif, it is perfect with fish, white meat and light meals in general.
