Ultra Brut is a style of Sparkling wine that is very dry and brisk with a low dosage that highlights the structure and minerality of our Brut. It is a contemplative wine that appeals to the true aficionado.
Harvest Note
The 2019 growing season started with saturated soils thanks to abundant winter and spring rains. Cooler weather throughout the summer meant plenty of time for flavors and aromatics to develop, and an early heat spike in August helped push the ample crop of grapes to full maturity. The continuing heat of August resulted in a fast and furious sparkling harvest. The wines that resulted have a focused elegance on the palate that finishes with bright acidity.
Tasting Note
Aromas of fresh flowers, hay, key lime, yuzu, and pear on the nose lead to a beautifully balanced palate of green apple, lemon zest, ginger, and lychee. With a surprising mouthwatering complexity, its bright, crisp fruit, and searing minerality ride on a serious structure and generous effervescence.

Chardonnay
Though it has a distinctive profile, Chardonnay reflects other factors such as soil composition and vinification technique. Chardonnay is a reliable, hardy and prolific vine whose only real vulnerabilities are frost and uneven development of fruit.
Pinot Noir
In France, makes a silky, deceptively powerful wine of elegant, complex aromas and subtle, red fruit flavors, with earthy, floral, mushroom and mineral notes. In California, shows ripe, sweet characters.
