Bollini Merlot comes from Trentino, where the clay soils in the cool, dry highland vineyards are ideally suited to producing clean, elegant and aromatic wines of great charm. Hand harvested grapes are destemmed and crushed, and vinification is carried out in temperature-controlled stainless steel tanks, followed by maturation in large oak casks.

Harvest Note
Winter saw lower-than-average temperatures and precipitation. Spring was cooler than it has been in years, which caused a delay in budbreak. But mild temperatures in May brought everything ten days up. Flowering took place in a mild period, which didn’t see any rain, guaranteeing excellent fruit set. June and July saw higher-than-average temps and little rain, which raised a few alarms. However, late-summer rains alleviated any cause for concern. September was beautiful in terms of the weather, allowing us to pick perfectly healthy grapes with natural sugar levels higher than average. The wines show lovely notes of ripe red fruit and good balance between the structure and the tannins.
Tasting Note
Rich ruby with garnet reflections. Fruity on the nose with hints of spices, red fruits and pink pepper; dry, mouth-filling and harmonious with elegant tannins, very well balanced by the acidity; very long on the finish.
Food Pairing
It goes very well with meat dishes, cheeses and full-flavored first courses.
