A classic in the Dolomites, Sauvignon Blanc has found growing conditions similar to those in its original terroir, the Gironde, in southern France. This grape performs best on sunny hillsides where soils are rich in gravel. Sunlit vineyards in the Dolomites area, mainly in Trentino, located at about 984 feet above sea level, south/southwestern exposure, gravelly soils. Once the berries have been de-stemmed and crushed, they are chilled and left to macerate for twelve hours before pressing. Traditional white wine vinification is then carried out.
