The Bollini story began in 1979, when Neil and Maria Empson decided to create their own label in the Alpine foothills of Friuli and Trentino. Their goal was to showcase the excellence and consistency of international varieties grown in the cool northeastern regions, while keeping the prices affordable. A classic in the Dolomites, Sauvignon Blanc has found growing conditions similar to those in its original terroir, the Gironde, in southern France. This grape performs best on sunny hillsides where soils are rich in gravel. Sunlit vineyards in the Dolomites area, mainly in Trentino, located at about 984 feet above sea level, south/southwestern exposure, gravelly soils; density is about 4,000 – 5,000 vines per hectare. The grapes are picked when the berries begin to turn green/gold, when sugar concentration and aromas are in perfect harmony. Once the berries have been de-stemmed and crushed, they are chilled and left to macerate for twelve hours before pressing. Traditional white wine vinification is then carried out.

Harvest Note
Winter saw lower-than-average temperatures and precipitation. Spring was cooler than it has been in years, which caused a delay in budbreak. But mild temperatures in May brought everything ten days up. Flowering took place in a mild period, which didn’t see any rain, guaranteeing excellent fruit set. June and July saw higher-than-average temps and little rain, which raised a few alarms. However, late-summer rains alleviated any cause for concern. The Sauvignon Blanc grapes were picked in early September. The climate was mild and the grapes ripened well, favoring the development of more tropical aromas, with fewer herbaceous notes. The palate shows balanced structure and minerality. Excellent persistence.
Tasting Note
Pale straw yellow. Complex and aromatic on the nose, full with assertive personality on the palate. An intense bouquet of Trentino fruits, like apple and pear, with a hint of grapefruit and lemongrass. Very good structure and long persistence.
Food Pairing
A wine with plenty of substance, it goes well with full-flavored appetizers and fish in sauces.
