Crémant de Loire is méthode traditionnelle sparkling wine from the Loire Valley. The region is known for tuffeau, a local chalky limestone used to build the numerous castles that dot the Loire Valley. Limestone soil is ideal for cultivation of Chenin Blanc. The grapes are hand harvested and fermented in stainless steel tanks. The second fermentation occurs in bottle and ages 18+ months on the lees. The Bouvet cellars are in an ancient tuffeau quarry, the perfect environment for aging wine.
