Bouvet Ladubay sources its fruit from more than 100 plots in the Loire Valley, obtaining the best quality at every harvest through its long-standing relationships with winegrowers. The limestone subsoil is ideal for the cultivation of Chenin Blanc, and the mild climate coupled with the excellent drainage of the clay creates the natural acidity needed to produce a balanced sparkling white wine. All grapes are hand harvested and spend a minimum of 12 months on the lees. Fermentation takes place in stainless steel. The finest wines from each lot are blended and the cuvée is bottled for the second fermentation following the traditional method.

Harvest Note
Jacques Frost wreaked havoc in much of the Loire Valley, with up to 95% crop loss in Savennières. Despite that, overall yields were slightly higher than the equally devastated 2016 crop. The quality of the remaining grapes by harvest time was promising with slightly lower acidity than usual in the whites.

Pale gold in color with amber hints. Delightful flower, pear & apple aromas. Expressive and beautifully fruity on the palate. Fresh, elegant & balanced.

Chardonnay
Though it has a distinctive profile, Chardonnay reflects other factors such as soil composition and vinification technique. Chardonnay is a reliable, hardy and prolific vine whose only real vulnerabilities are frost and uneven development of fruit.
Chenin Blanc
Depending on the soils, Chenin Blanc can be lush, with stone fruit and pear characters; or quite dry, with green apple and beeswax notes.
