

The castles that dot the Loire are built from tuffeau, a local chalky limestone that creates soil ideal for Chenin Blanc. The Bouvet cellars are in ancient tuffeau quarries, perfect for aging wine. Bouvet sources grapes from over 100 plots in the Loire Valley through long-standing relationships. The first fermentation takes place in stainless steel with the second fermentation in bottle. The wine is aged on the lees for 9 to 24 months.
