Bollini Chardonnay has an intense bouquet of fresh fruit with delicate notes of vanilla and honey given by the fermentation in barrique. In Trentino, the difference between daytime and nighttime temperatures helps create wines that are remarkably fresh and robust in aroma and flavor. These grapes are handpicked, destemmed and given a few hours of cold maceration. The grapes are then soft pressed before vinification with selected yeasts in a combination of temperature-controlled stainless steel tanks and oak barriques (hence the name Barricato). After fermentation, the portion that is fermented in barrique undergoes malolactic fermentation and both parts rest on the lees, with stirring, before blending and bottling.

Harvest Note
Winter saw lower-than-average temperatures and precipitation. Spring was cooler than it has been in years, which caused a delay in budbreak. But mild temperatures in May brought everything ten days up. Flowering took place in a mild period, which didn’t see any rain, guaranteeing excellent fruit set. June and July saw higher-than-average temps and little rain, which raised a few alarms. However, late-summer rains alleviated any cause for concern. The harvest for the Chardonnay grapes, grown in hilly vineyards, began in late August and ended in the first 10 days of September. The climate was particularly nice, guaranteeing just the right amount of sugar while maintaining acidity levels. The wines are well-structured, round with a harmonious finish. The nose shows fruity notes of yellow-fleshed fruit, integrated with the typical mineral notes of Trentino Chardonnays.
Tasting Note
Straw yellow in color, delicate on the nose, with fragrant aromas of vanilla, honey, and fresh fruits such as pear. A fresh aromatic richness, with a mineral note, characterizes the palate. Elegant and well balanced structure, supported by a crisp acidity. Smooth, round with persistent on the finish.
Food Pairing
A superb quality wine, ideally enjoyed with fish, and white meats. It is also an excellent match for typical  Mediterranean cuisine, pasta and fresh vegetable dishes.
