From the 100% Falanghina of the ancient Romans (“vinum album Phalanginum”) is born the Falerno del Massico Bianco DOC of Villa Matilde. In the sixties, Francesco Paolo Avallone, a lawyer and passionate expert of antique wines, becoming curious about the stories of Plinio and the verses of Virgilio, Marziale and Orazio on Vinum Falernum, decided to bring back the legendary disappeared wine, identifying the grape varieties that had given birth to Falerno in Roman times. Few strains, which survived miraculously to the devastation of the late 19th century phylloxera, were replanted with the help of some local farmers, right in the native land of Massico, where these grapes had once prospered. The process of winemaking of this white wine involves grapes criomaceration, in order to obtain a greater aromatic extraction and improved wine structure, followed by gentle pressing. The must is gravity-settled, then fermented at a controlled temperature of 50 – 54 F for about 20 days. Finally, the wine ages in steel for 3 months.
