From the 100% Falanghina of the ancient Romans ("vinum album Phalanginum") is born the Falerno del Massico Bianco DOC of Villa Matilde. In the sixties, Francesco Paolo Avallone, a lawyer and passionate expert of antique wines, becoming curious about the stories of Plinio and the verses of Virgilio, Marziale and Orazio on Vinum Falernum, decided to bring back the legendary disappeared wine, identifying the grape varieties that had given birth to Falerno in Roman times. Few strains, which survived miraculously to the devastation of the late 19th century phylloxera, were replanted with the help of some local farmers, right in the native land of Massico, where these grapes had once prospered. The process of winemaking of this white wine involves grapes criomaceration, in order to obtain a greater aromatic extraction and improved wine structure, followed by gentle pressing. The must is gravity-settled, then fermented at a controlled temperature of 50 - 54 F for about 20 days. Finally, the wine ages in steel for 3 months.

Harvest Note
A mild winter was followed by snow in early march which increased the humidity of environment. The rest of the spring was characterized by extreme heat peaks alternating with some rainfall especially in summer which created high humidity. In June the rains started to give a little respite, favoring a regular flowering and in a fairly short time. The month of August was marked by some brief afternoon thunderstorms maintaining very warm temperatures. Overall, the development of vegetation was fast, continuous and vigorous. The large temperature range has slowed down the maturation process, favoring the synthesis of primary aromas and secondary precursors and preserving very fresh acidity.
Tasting Note
This Falanghina has of straw yellow colour. A deep and elegant bouquet offers hints of ripe fruits, including pineapple, banana, yellow peach, Williams' pear, broom and rose blossoms. On the palate, you will taste delicate notes of sage and vanilla, mixed with a slight hint of almonds. The balanced, velvety, rich and persistent flavour displays remarkable refinement and personality.
Food Pairing
This wine pairs well with non-fatty appetizers, fish in all its preparations, shellfish, soft and medium aged cheeses. Grilled white meat or stuffed poultry and vegetables: asparagus, chicory, radicchio and onion.
