Orvieto Classico is a subregion of Orvieto with primarily limestone tufa and volcanic soil. The superiore classification requires limited yields and dictates the amount of Trebbiano included in the blend. The grapes are hand harvested from the lakeside vineyards. Each variety is vinified separately. The must is chilled and fermented in temperature-controlled steel tanks and is then transferred to cement vats until blending and bottling.
