Cuvée des Cadettes was created in the 19th century when a plot was replanted following phylloxera. The vines were the cadettes or youngest at the time and are now the oldest on the estate with vines aged 80 to 100 years old. The grapes are party destemmed and co-fermented in a wooden tronconic vat with wild yeast native to the vineyard. A long maceration lasts 4 weeks and the wine is racked into concrete tanks for malolactic fermentation. It is aged for 12 months in foudres and oak barrels.

Harvest Note
After a mild and dry winter, spring rains allowed to vineyard to develop perfectly. There was moderate water stress in the hot summer, and a heat wave hit in mid-August. After some rain, the harvest began without any time pressure allowing the winery to work with precision in plot selection.
Tasting Note
Ruby red in color, this dense yet elegant wine offers notes of cherry, plum, roses, and pepper with silk tannins. The finish is long and the wine shows great aging potential.

Grenache
Grenache is loaded with dense, lusty aromas and flavors of black cherry, blackcurrant, jam, pepper and licorice, with a palate-coating texture and high alcohol.
Mourvèdre
Mourvèdre makes big, meaty, rustic wines high in alcohol, acidity and tannin, with moderate black fruit characters. Shows aromas and flavors of wild Provençal herbs, leather, mushrooms and barnyard.
Syrah
Syrah has seductively dense, rich, chewy black berry aromas and flavors, with notes of tar, wood smoke, bacon, leather, chocolate, and sometimes violets. The tannins are firm yet elegant.
