Named after the sapphire, this gem of a sparkling wine is rich in aromas and flavors with a polished intensity. Saumur is known for tuffeau, a local chalky limestone used to build the numerous castles that dot the Loire Valley. Grapes are hand harvested from vineyards in Saumur. The second fermentation occurs in the bottle per the traditional method and the wine ages 18+ months on the lees. The Bouvet cellars are in a tuffeau quarry, the perfect environment for aging wine.

Harvest Note
The 2024 vintage was challenging throughout the Loire Valley due to spring frosts and higher-than-average rainfall during the summer months. The result was low yields but intensely concentrated, high-quality fruit, especially for the region’s white grapes.
Tasting Note
Pale gold in color with hints of amber and fine bubbles, this full-bodied sparkling wine offers intense aromas of white flowers, peach, acacia, honey, and hazelnut.
