Twenty- to 30-year-old vines are planted to south-facing vineyards 80 meters above sea level in volcanic soil with white sand and chalk deposits. The fruit is handpicked, and the skins are gently broken. Fermentation occurs in stainless steel tanks. A first blending of lots takes place when the wine is placed in barrique; a second at the first racking. The wines are then bottled with minimum intervention.

Harvest Note
The 2021 wine harvest in Sicily was characterized by lower grape yields due to a hot, dry summer and a significant heatwave in June, which affected berry size and overall volume . Despite these challenges, the quality of the grapes was notably high, with small berries contributing to concentrated flavors, leading to expectations of excellent wines across the region . The harvest, spanning from late July to October, benefited from careful vineyard management and favorable conditions during flowering and fruit set, resulting in a vintage praised for its balance and aging potential
