Located north of the village of Greve in the heart of the Chianti Classico region, the Nozzole estate covers a striking, rugged, mountainous area of about 1,000 acres, a third of which is vines and olive groves. At 350 meters in elevation, the 10-acre Il Pareto vineyard has clay soil with lime and gravel-size stones. The soil composition is ideal for Cabernet Sauvignon, with a high proportion of galestro rock. Il Pareto grapes are manually harvested, destemmed and crushed before fermentation and malolactic fermentation in temperature-controlled stainless steel tanks. Maceration on the lees promotes the extraction of optimal color and fine, structured tannins. The wine is aged in oak and in bottle before release.

Harvest Note
The 2021 vintage began with a mild winter and with sporadic rainfall. The sudden return of cold in March was characterized by a frost that occurred at the end of the month causing some damage to the newly hatched buds. From mid-April temperatures increased and spring continued regularly, favoring good flowering and fruit setting, which took place between the end of May and the beginning of June. The summer tended to be hot and dry, but without heat peaks. September was marked by above-average temperatures until the last week of the month, a period after which there was generally cool and rainy weather that lasted until October.
Tasting Note
In the glass it appears purplish red. Very intense and enveloping nose with descriptors attributable to red fruits, pomegranate, marasca cherry, dried plum with nuances of incense, bay leaf and black pepper. On the palate it is dry with a great deep body, saline and an aftertaste of spicy tertiary aromas. Wine of great complexity since its current youth.

It can be combined with any very rich and savory dish: elaborate first courses, red meats, aged cheeses.
