Fruit for Le Difese is selected from Tenuta San Guido estate’s younger vines. Fermentation for both varieties takes place on the skins in temperature-controlled stainless steel vats. The wine is matured in French and American oak barrels.
The autumn was mostly warm and dry, but in November, temperatures dropped with rainfall that replenished the water reserves. Winter began with mild temperatures and intense fog, while February recorded very cold temperatures with minimums around -3°C, accompanied by rain and snow at higher altitudes. The summer was characterized by above-average temperatures, but the good water availability allowed the plants to grow regularly. The intense heat led to thoughts of an early harvest, but the rain at the end of August restored the situation and allowed the grapes to reach proper maturity.
Tasting Note
Intense black fruit aromas and flavors as well as the vanilla and spice of oak in a full-bodied wine with supple tannins.
Food Pairing
Bright red with purple nuances. Crisp acidity and pleasant palate of every day wine drinking, with juicy red fruits. A very good wine that is meant to be enjoyed young.

AGING: The wine was fined in French oak barriques, previously used for Guidalberto. Subsequent conservation in steel vats at a controlled temperature of 37-39°F to confer tartaric stability before bottling.

Sangiovese has aromas of black cherries with alluring wood, smoke, tar and herbal notes. The best wines made from this grape have incredible complexity, depth, finesse and power.
