Fruit for Le Difese is selected from Tenuta San Guido estate’s younger vines. Fermentation for both varieties took place on the skins in temperature-controlled stainless steel vats for 12 days. The wine was matured for 12 months in second hand oak barrels.

Harvest Note
At the end of a mild and dry autumn, temperatures from January were often rigid and the cold was made even more intense by the strong north winds. The main feature of the winter was the considerable lack of rain which, except for some showers in February, were almost absent for the rest of the period until, bud break. Since mid-March, the beautiful sunny days and the consistent increase in temperatures anticipated the budding. However, in April temperatures dropped again and the long-awaited rains arrived. Thanks to these spring rains, the water situation of the subsoils normalized. Two short hailstorms during two days of April thinned the shoots and slightly reduced the amount of production, especially on the most forward plants. The continuation of spring was somewhat unusual, characterized by low temperatures and consistent rains, with winds from the North. A climatic condition that has involved agronomists a lot and that has conditioned the vegetation by delaying growth. The flowering phase took place in May in good conditions and no winds, subsequently there was an excellent fruit set which took place regularly. Summer started in mid-June, with mild temperatures, sunny days and intense ventilation.
Tasting Note
Bright red with purple nuances. Crisp acidity and pleasant palate of every day wine drinking, with juicy red fruits . A very good wine that is meant to be enjoyed young.
Food Pairing
Pair with grilled steak or steak salad, hamburgers and other casual but flavorful beef dishes. Has good acidity to compliment marinara and bolognese sauces.
