In recent years Jadot has increased focus in Chablis, adding a new winery in 2019 and stabilizing the range from village through premier cru and grand cru. This wine adds value and flexibility by blending across multiple premier cru sources to achieve a wine that exemplifies a comprehensive Chablis character. Careful management of the malolactic fermentation, and aging in oak but only partially new barrels, produces a wine of vibrant energy, soil-driven intensity, and graceful citrus nuances.

Harvest Note
The 2020 vintage was quite early, as the growth cycle commenced with a warm period in late winter which was followed by a hot and dry summer. There were a few well-timed rains which moderated the drought conditions and relieved the vines. There were no diseases to contend with and the fruit arrived in a perfectly healthy state. Despite the heat alcohol levels are quite moderate, while acidity was retained. These are wines with lovely balance, a hint of tension, and which are capable of aging.
Tasting Note
Aromas of musk, damp earth, white flowers and melon are followed by a supple texture lifted with subtle acidity. Over the course of the long finish one senses hints of grapefruit and citrus skin which linger on the palate.
Food Pairing
Pair with all seafood cuisines, whether grilled, sauteed or raw. Also recommended with vegetables in butter or cream sauces.
