

The Clos des Couchereaux is a unique and historic parcel located on the Beaune "mountain" and facing due South. Soils are red clay, and the site is slightly cooler in the mornings due to its position. Pinot Noir here is harvested manually and brought to the nearby winery for triage, destemming, and natural fermentation in passive oak vats. After alcoholic fermentation is complete the wine is racked into oak barrels for malolactic fermentation and extended aging. Approximately 16 months later the cuvee is reassembled for bottling.
