AIX Rosé is made in the Provence region of France, just an hour East from the historical city of Aix-en-Provence. AIX was founded in 1880 with the first vines planted in 1973. The vineyard consists of 185 acres of vineyard and is one of the largest domaines in the famous AOP Coteaux d’Aix-en-Provence. These vineyards are non-irrigated and on a plateau at an elevation of 1,400 feet above sea level. The mistral winds keep the clusters dry and healthy. The soils vary from sandy, chalky soil to limestone and are highly acidic. AIX nurtures its heritage and has a passion and dedication to make the best Provence rosé. As part of this, all of their grapes are sustainably farmed.

AIX Rosé is produced in the typical Provencial style using the direct pressing method. To avoid oxidation, the grapes are cold soaked and chilled to 46 degrees Fahrenheit. The grape clusters are then destemmed before pressing and are macerated only at low temperatures for 5 to 6 hours. Fermentation is temperature controlled in stainless steel tanks for 12 to 16 days at 57 degrees to keep the maximum fragility in the nose using monocepage fermentation. To get that beautiful pale pink color Provence Rosés are known for, AIX uses cold stabilization. They maintain the must in a closed tank for one week at around 35 degrees with the lees suspended with a neutral gas. The lees give a lot of aromas and a great body to the wine. The wine is then aged in a stainless steel tank for 2 to 3 weeks before bottling resulting in an AIX Rosé that is elegantly tasty and the perfect wine to drink all year long.

Harvest Note
The 2019 vintage represents a rarely seen level of freshness and minerality. Given the difficult weather experienced throughout that year, one can thank the extraordinary terroir for the Grenache developing so nicely. A dry and very hot summer followed by late rains enabled great maturity level. Grapes were picked as early as 4am to ensure that their delicate aromas, flavors and freshness were captured. The best balance and best vintage we’ve had in a long time.

A fragrant and well-balanced wine, AIX's hypnotizing salmon pink color reveals a fruity freshness. The nose is delightfully fragrant with delicate balance and crisp acidity. Enjoy the notes of soft, ripe summer fruits particularly watermelon and strawberries.

About the Grape

Cinsaut
Ripe and meaty over elegant, with rose and almond notes, Cinsault’s relatively low tannins typically relegate it to blends with other varieties, as with Châteauneuf-du-Pape and Tavel Rosé.
Grenache
Grenache is loaded with dense, lusty aromas and flavors of black cherry, blackcurrant, jam, pepper and licorice, with a palate-coating texture and high alcohol.
Syrah
Syrah has seductively dense, rich, chewy black berry aromas and flavors, with notes of tar, wood smoke, bacon, leather, chocolate, and sometimes violets. The tannins are firm yet elegant.
