Gevrey Chambertin is the northern most of the great communes within the Côte de Nuits, with eight Grands Crus and twenty-six Premiers Crus. Half of the Premiers Crus in Gevrey-Chambertin are located in the valley called Combe de Lavaux, on calcareous and clay soil with marl. The Premier Cru Combe aux Moines vineyard is situated at the north of Combe de Lavaux, next to the Premier Cru Cazetiers vineyard, and facing south, with soil high in chalk and clay content. This wine is fermented in vats for 3-4 weeks and aged 12-15 months in oak barrels before bottling. This wine can be enjoyed after five years, and can benefit from aging for 15 years in good cellar conditions (cool temperature with high humidity).
This wine shows the typicity of Gevrey Chambertin: deep color, multi-faceted berry and red fruit aromas, and a full, tannic structure and mellow texture that lead into a long finish.
