Fourchaume is one of the best-known Chablis premier crus, located on a gentle hillside just north of the Grand Cru slope. Soils are Kimmeridgean clay with exposure to the south and southeast, assuring ripe grapes in most vintages. This wine is produced in Jadot's new facility in Chablis, and aged in large oak barrels and stainless steel tanks.

2021 vintage
Harvest Note
The 2021 vintage was memorable for the extreme challenges it posed to growers. The defining event was a hard freeze in April which lasted several days, and the subsequent dramatic reduction in harvest volumes. Added to this were cool and wet summer conditions which required constant vigilance. The delayed harvest eventually yielded tiny volumes of pristine grapes which express a vibrant and energetic purity.
Tasting Note
Tangy and inviting, with aromas of wet stones and citrus skin, this is classic Chablis without any austerity. The brisk acidity adds length and energy but is buffered by the ripe fruit elements.
Food Pairing
Perfect with most seafood preparations, including sushi, mussels, paella, or baked fish.
