Cabreo Il Borgo debuted in 1985 with its 1982 vintage. Just above Greve in the Chianti region, the Cabreo holdings include 124 acres planted to Sangiovese and Cabernet Sauvignon grown to produce Il Borgo. Chianti’s famed stony soils are ideal for making wines with great aging potential. At 984 feet in elevation, the densely planted vineyards produce low yields of grapes with concentration and complexity. Fermentation at controlled temperature with extended maceration enhances the wine’s rich body, color and texture. After malolactic fermentation, the wines are blended and matured in oak barrels and spend at least six months in bottle before release. The word borgo refers to a small village, Montefioralle, that overlooks the vineyards.

2019 vintage
Harvest Note
The 2019 season opened with a rather regular winter in terms of both temperatures and rainfall; despite these climatic conditions, the vineyards began budding one week earlier than the historical average of the area. The spring period, and May in particular, was characterized by frequent rains with temperatures slightly lower than usual, while the months of June and July were dry and quite hot, but without ever showing extreme conditions. Some rain in August and a dry and windy period in September and October allowed the grapes to ripen in an ideal way, guaranteeing a good sugar content and an excellent polyphenolic maturation.
Tasting Note
Deep ruby color with purple tendencies. Cherries, raspberries, rhubarb, licorice hints of peanuts and sesame, and dried herbs. Medium to full body with a creamy texture and fine, smooth tannins. Refined and round with delicate fruit, chocolate and nuts. Silky finish
Food Pairing
It goes perfectly with all meat dishes, great cheeses, or just enjoyed with friends.
