While not explicitly written on the label, all wines from Chablis are made from 100% Chardonnay. No other grape is allowed in the four Chablis Appellation d’Origine Contrôlée (AOC), and no one has seen the need to change that. It is here, in the northernmost region of Burgundy, that some believe the grape is expressed in its “purest” form. These wines are crisp, textured, and acid-driven with electricity and a delicious whisper of fruit. For Chardonnay lovers, Chablis is pure heaven (which is why some wine lovers endearingly call it “cha-bliss”).
Louis Jadot Chablis Blanchot Grand Cru, 2021 displays great tension and laser-like precision, featuring notes of white peach, acacia, white mushroom, and wildflowers, all underscored by an abundance of minerality. On the palate, it offers good volume, texture, and acidity, with umami-rich fresh apples, kelp, and lady pink apples. Complex and versatile, it pairs beautifully with spiced dishes and can cellar well through 2035+.
