The castles that dot the Loire are built from tuffeau, a local chalky limestone. The Bouvet cellars are in ancient tuffeau quarries, perfect for aging wine. Bouvet sources grapes from over 100 plots in the Loire Valley through long-standing relationships. The first fermentation takes place in stainless steel with the second fermentation in bottle. The salmon pink color results from a quick maceration on the skins of the red Cabernet Franc grapes. The wine is aged on the lees for 9 to 24 months.
