

Boucherottes lies in the south sector of the Beaune Premier Crus on a mild slope near the Pommard border. Soils are dense red clay and marl, and the wines tend to mirror those of the neighboring village. Pinot Noir here is harvested manually and brought to the nearby winery for triage, destemming, and natural fermentation in passive oak vats. After alcoholic fermentation is complete the wine is racked into oak barrels for malolactic fermentation and extended aging. Approximately 16 months later the cuvee is reassembled for bottling.
