This Cabernet Sauvignon is sourced primarily from Montes' Finca Apalta Estate vineyard with some additions from their Marchigüe Estate vineyard. These two unique vineyards feature granite-rich soils in differing degrees of decomposition. Both have considerable variation in the clay content, depth, and organic matter from the influence of erosion and deposits from local rivers over time. The soils are generally deep in the flat areas and thinner at the foot of the mountains and at higher elevations. Cabernet Sauvignon is planted on flat or slightly sloping ground where the soil is deeper and has a moderate capacity for moisture retention.

Harvest Note
In terms of rainfall the 2017 winter was excellent, with total accumulation exceeding 500 mm. in the Colchagua Valley, making it the rainiest year of the last decade. This allowed us to have ample water in our soils and reservoirs, ensuring the optimal development of our plants at all phenological stages, arriving comfortably to harvest. In November there were a few minor spots of spring frost which meant a delay of a few weeks in bud break and flowering. Summer had moderate temperatures, with January averaging 82º F. February saw a notable dip in nighttime temperatures, delaying the ripening of some red and white varieties; in some cases up to 14 days later than the previous season. We were able to harvest the Cabernet Sauvignon at a steady rhythm, taking advantage of the absence of rain, which meant excellent grape health, good measures of ripening, and great varietal expression during fermentation.
Tasting Note
The nose is elegant and complex with aromas of very well-blended ripe red and black fruit. Aromas of crème de cassis, tobacco, and black pepper stand out against a backdrop of toast and pastry notes. The palate is smooth, but well-structured with sweet tannins leading to a lasting and elegant finish.
