Perrières, named in reference to the stony "mother rock" lying very near the surface, produces wines which are among the most highly sought-after of all Burgundy whites. This terroir is situated just below the crest of the slope and South of the village in the direction of Puligny. The soils consist of light clay and fractured limestone, with ideal Southeast exposure. Chardonnay is harvested by hand and brought to the winery in Beaune for triage, destemming, and initial fermentation and transfer to oak casks. Malolactic fermentation is managed according to the nature of the vintage to retain freshness and vibrancy.
