Chablis is noted for its crisp, clean style, and that’s why it’s perfect for this time of year. As is customary in all of France, Chablis wines can only come from the Chablis region in northern Burgundy, and they are always made with 100 percent Chardonnay, the only grape allowed in the appellation. There are four different bottlings in the Chablis region, including Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Premier Cru and Grand Cru Chablis wines will age gracefully for 10 years and well beyond, and even village-level Chablis will continue to evolve in the bottle for three to five years.
Louis Henry Denis Jadot founded what would eventually become Louis Jadot in 1859, and today it is one of the largest producers in Burgundy with 140 acres of vineyards in some of the best appellations. The maison’s Chablis Premier Cru Fourchaume has aromas of lemon pith, crushed oyster shells, and orange blossoms with bright acidity and flavors of canned white peach, freesia, Meyer lemon, and just a touch of brown baking spice in the finish. With almost five years since harvest, it is drinking just perfectly right now.
