Tutto Mio is vinified using a proprietary blend of grapes, all native to Emilia Romagna. Tutto Mio is cultivated on clay and gravel soils, which give structure and acidity to the wines. The vines are cordon trained and spur pruned, in the traditional method of the region, which ensures perfectly ripe and balanced grapes grow every year.
After harvest, the grapes undergo a long fermentation with skin contact, before a second naturally occurring fermentation in tank (charmat method). The resulting wine is delicious and incredibly versatile, pairing extremely well with many types of food.
