The Saumur region’s defining characteristics are the tuffeau caves, where wines mature at constant temperature, and the chalky soil in which the vines grow.

The Saumur region is located in the central Loire Valley, southeast of the city of Angers. The region is famed for sparkling wine production, its defining characteristics being the tuffeau caves where wines mature at constant temperature, and the chalky soil in which the vines grow. The cool climate is ideal for the production of the high-acidity base wines required for sparkling wines.

Sparkling Saumur, like many Champagnes, is a wine of the blender’s art. Bouvet Ladubay does not own vineyards, but is affiliated with 100 growers who are under technically precise supply contracts to Bouvet for the purchase of grapes. Rather than purchasing base wines from growers, as is often done, Patrice Monmousseau purchases only grapes for Bouvet’s vinification to ensure control over each stage of production, from fermentation through final corking.
