Chosetsu is the prestigious Junmai Daiginjo from Yuki No Bosha, awarded every year at the Akita Sake Competition since 1989 and honored 19 times at the Tohoku Sake Awards. Brewmaster Toichi Takahashi, a National Treasure of Japan, is renowned for his uncompromising approach to natural brewing. Saiya Brewery uses proprietary yeasts, some 40 years old, and works closely with Hyogo’s Yamada Nishiki farmers to craft sake of exceptional character and purity.
