

Aux Cras is a well-situated terroir near the center of the Beaune slope and just above Theurons. Soils are a mix of red clay and small stones, and exposure is Southeast. Wines from this site are among the best of Beaune, prized for their complexity and age-worthiness. Pinot Noir here is harvested manually and brought to the nearby winery for triage, destemming, and natural fermentation in passive oak vats. After alcoholic fermentation is complete the wine is racked into oak barrels for malolactic fermentation and extended aging. Approximately 16 months later the cuvee is reassembled for bottling.
Aux Cras marries elegance with power, beginning with aromas of sweet red berry fruit and hints of wet stones. Tannins are firm and acidity is bright, and alcohol level is substantial, all providing the structural framework to support long aging. Over time (or with air) abundant secondary floral and spice nuances appear as the youthful sharp edges recede.
