Maison Saint Aix is situated in the vineyards of a 140-year-old domaine at one of the highest elevations in the region. The Mistral wind keeps grapes dry and healthy. Grapes are harvested in the cool early mornings, preserving delicate aromas and minimizing oxidation risk. The grapes are directly pressed. The must is maintained at 41°F for 5 days to extract maximum aromatic compounds, followed by fermentation in stainless steel tanks at 59°F. All transfers occur in an oxygen-free environment to prevent oxidation, resulting in a beautiful pale straw color with hints of green.

Harvest Note
Rains during autumn 2024 and spring 2025 recharged the water levels in the soil and created ideal conditions for vine growth, even as Provence experienced one of the hottest Augusts in recent years. With no frost episodes, the vines thrived and delivered fruit of exceptional quality. The harvest was one of the earliest in the history of Maison Saint Aix. The resulting fruit showcases a beautiful balance and the clear expression of the high-altitude terroir.
