

La Chapelle is made from 40- to 100-year-old Syrah vines grown on steep slopes using goblet on stakes training. The organic grapes are hand-harvested and manually sorted. Fermentation takes place over ten days using indigenous yeasts, followed by a two-week maceration to allow the components of the wine to meld gradually. The wine is aged for 12 months in French oak barrels (15% are new).
