Blended from basically equal parts of the traditional grapes used for Cava, Macabeo, Xarel-lo, and Parellada, this sparkler is friendly in character. Its mid-weight — 11.5 percent alcohol — character and its fruity profile makes it a lovely wine to use as an aperitif on hot and humid summer evenings. Refreshing and clean, it is made entirely from organic grapes. A spine of acidity keeps it fresh.
A clean, floral Cava made with organically grown grapes, this wine’s pear flavors have touches of sweetness. Leesy and broad, it will take on pork schnitzel. —J.G.
