Among the best-known and most highly regarded of Volnay terroirs, the Clos des Chênes is a large parcel that extends across the Southeast-facing slope with white soils near the top and red clays below. The wines are exemplary Volnays with charming red fruit and soft tannins even at a young age. Pinot Noir here is harvested manually and brought to the nearby winery for triage, destemming, and natural fermentation in passive oak vats. After alcoholic fermentation is complete the wine is racked into oak barrels for malolactic fermentation and extended aging. Approximately 16 months later the cuvee is reassembled for bottling.
