

The Loire Valley is ideal for growing Sauvignon Blanc. Warm days and cool nights enable grapes to grow to maturity with intense aromatics. The chalky limestone soils act as a water reservoir during dry periods and impart the signature minerality of the region’s Sauvignon Blanc. Grapes are farmed sustainably by partners in Saumur, Touraine, and Pays Nantais. Nantes has sandy soil that impart round and rich flavors while the calcareous Touraine and Saumur give the wine its signature minerality, bright citrus and exotic fruit notes. The average vine age is 35 years. Fermentation is done in stainless steel tanks at 59 to 64.4 ˚ F with bâtonnage to add body and complexity.
