The 2017 Domaine Carneros “Ultra Brut” is produced entirely from organically-grown, estate fruit, with a cépages of fifty-seven percent chardonnay and forty-three percent pinot noir. The 2017 was disgorged in August of 2021 and finished with a dosage of 4.5 grams per liter. The wine delivers a refined and quite delicate bouquet of lemon, tart apple, spring flowers, bread dough, a fine base of soil tones and a bit of upper register smokiness. On the palate the wine is vibrant, full-bodied, focused and complex, with a good core, lovely soil signature, frothy mousse and a long, vibrant and well-balanced finish. This is very good.
