Montes Classic Series Cabernet Sauvignon comes from our Apalta and El Arcángel del Marchigüe vineyards in the Colchagua Valley. A bright violet-red colour, it has aromas of strawberries, plums and figs, along with notes of sweet spices including nutmeg and black pepper.

Harvest Note
The 2016-2017 season began with a drier winter than usual. During the spring, there were four consecutive days of frost in the coldest valleys, although they did not have a significant effect on the red varieties. The summer was very hot, and temperatures approached 40ºC in some sectors of the valley in January, which accelerated ripening in some varieties. Night-time temperatures dropped signifi¬cantly in early March, enabling the grapes to develop more aromas, ripen their tannins, and obtain tremendous color in their skins. Generally, the smaller yields meant the grapes were smaller and more concentrated leading to wines of excellent quality and expression.
Tasting Note
Bright and lively violet-red color with aromas of ripe strawberries, plums, and figs. Notes of tobacco, leather, and dark chocolate also intermingle with sweet spices such as nutmeg and black pepper. On the palate, the wine features well-balanced acidity, medium body, and incredibly smooth tannins followed by a moderately persistent finish.
Food Pairing
Highly recommended with braised beef with french fries, steak and eggs, paella, cannelloni, and lasagna.

Cabernet Sauvignon
Cabernet Sauvignon is adaptable to various growing conditions, and is known for its low yield and late ripeness. It generally produces full-bodied wines with substantial acidity and tannins.
Merlot makes plump, succulent wines to drink young or opulently massive wines for aging. Has silky, blackberry and currant fruit, with spice, earth, tobacco and chocolate notes, and soft tannins.
