Montes Classic Series Cabernet Sauvignon comes from our Apalta and El Arcángel del Marchigüe vineyards in the Colchagua Valley. A bright violet-red colour, it has aromas of strawberries, plums and figs, along with notes of sweet spices including nutmeg and black pepper.

2016 vintage
Harvest Note
The 2015 – 2016 season began with a winter that was drier than the previous year (-15% in Marchigüe and -7% in Apalta). However, the unusual rainfall during the second half of October enabled us to accumulate an optimal level of water in the soil to ensure sufficient availability for our vineyards. The spring was frost free, which allowed for optimal budbreak, foliage development, and flowering. There was no significant rainfall during the summer, which began cool, especially in January. February, however, was one of the hottest in recent years. Temperatures dropped in March, which slowed ripening by approximately two weeks. The weather conditions remained very favorable until April, which presented 2 very significant episodes of rain in five days. Up to 180 mm fell in the Central Valley, which had a great impact on the wine industry and farming in general. Fortunately, by that date we had already harvested all of the grapes destined for our Montes Classic Cabernet Sauvignon and were able to achieve our quality objectives by harvesting at the precise time with somewhat lower potential alcohol levels and very good parameters for acidity, excellent aromatic intensity, very smooth tannins, and tremendous color.
Tasting Note
Bright and lively violet-red color with aromas of ripe strawberries, plums, and figs. Notes of tobacco, leather, and dark chocolate also intermingle with sweet spices such as nutmeg and black pepper. On the palate, the wine features well-balanced acidity, medium body, and incredibly smooth tannins followed by a moderately persistent finish.
Food Pairing
Highly recommended with braised beef with french fries, steak and eggs, paella, cannelloni, and lasagna.
