Pebbly chalk and limestone subsoils in the vineyard along with warm summers result in a wonderfully vibrant, fruity wine. Michel Redde uses temperature-controlled fermentation in stainless steel vats to create a pure expression of the Sauvignon Blanc grape, then the wine rests on its lees until bottling.

Harvest Note
2017 was a difficult but successful vintage. April frosts reduced the total 2017 production by 60%. This was followed by a very hot and dry summer that stressed the vines but led to great concentration of flavors and sugars in the grapes. Harvest began on September 11.
Tasting Note
Exotic notes of lychee, pineapple, and passion fruit, with underlying tones of pears and peaches. The minerality of the Kimmeridgian marl and limestone soils shine through a round palate with hints of salinity.
Food Pairing
Pairs very well with a wide variety of fish dishes, especially those with spicy and exotic sauces. Halibut with Pepper Salsa, Southwestern Style Tilapia Tacos, or Sweet & Spicy Sriracha Salmon are great accompaniments. Also, marinated white meat dishes of grilled chicken or pork are nicely complimented by this Sancerre.
