Twenty to 30-year-old vines are planted to south-facing vineyards 80 meters above sea level in volcanic soil with white sand and chalk deposits. The fruit was handpicked and the skins were gently broken. Fermentation was in stainless steel tanks and lined vats. After 20 days of regular punching down and topping of the cap, the wine underwent an initial blending and spent 12 to 14 months aging in French barriques, with a second blending at first racking. The wine was then aged for another six months in bottle prior to release.

Harvest Note
After a Spring slightly ahead of the average season, there was little precipitation throughout the growing phase. This reduced vegetation and provided less then generous quantities. Towards the end of the season, scattered rain showers elevated the plants from the long dry phase, allowing for a full and complete maturation in terms of phenolic and technological. While yields might have low, quality did not suffer.
Tasting Note
Intense ruby red color. The bouquet exhibits a great balance between the floral notes where the orange peel is well integrated with spiced notes of indian herbs. On the palate it is fresh, complex and persistent. The acidic components are significant and gives the wine a long life in bottle.
Food Pairing
A superb match for full-flavored meats and game, especially stews and roasts.
