In northern Italy’s Delle Venezie region, the Pinot Grigio vines are planted to hillside vineyards situated 750 feet above sea level, where they benefit from well-drained, mineral rich, volcanic basaltic rock and calcareous clay soils. After handpicking, the grapes were gently guided through a pneumatic press, followed by inoculation with selected yeasts and three weeks of cold fermentation. Malolactic fermentation was avoided to promote fresh acidity, and the wine is not oak aged, allowing the grapes’ varietal character to remain prominent.

Harvest Note
2015 was an ideal growing season that produced some of the finest grapes in recent memory. A warm, gentle spring led to a warmer-than-average summer. Rainfall was lower than average but spread evenly and gently over the growing season leading to wonderful concentration in the grapes. Blight and rot were at extraordinary low levels due to optimal temperatures and relatively dry conditions. Harvest remained dry and warm leading to exceptional fruit and wonderful wines.
Tasting Note
The Caposaldo Pinot Grigio features a dry, crisp, vibrant texture with medium body and delicate aromas of apples and other white fruit offset by acacia blossoms and almonds on the palate.
Food Pairing
Pairs well with poultry and light pork, fish and seafood, pasta dishes including the classic basil pesto, and delicate cheeses.
