Founded in the 1540’s, the Tomita Brewery is one of the oldest breweries in Japan and is now managed by the 15th generation of the family, Yasunobu Tomita, who is also the brewmaster. Tomita san is committed to his local area, its history, food, and agriculture. He works with a 6th generation rice-farmer to cultivate sake rice unique to Shiga Prefecture.

This sake is made with “Ginfubuki” rice which is a cross between the famous Yamada Nishiki rice and Shiga’s premier local sake rice “Tamazakae”. Ginfubuki was registered by farmers in Shiga prefecture in 1999. Tomita san now works closely with the rice farmers to cultivate and encourage this new variety, celebrating the uniqueness of Shiga prefecture’s sake culture.

Tasting Note

Herbal and nutty on the nose, this sake reveals green apple on the palate. It shows the classic Shichi Hon Yari style with a light and clean angle.
