Limited Selection Cabernet Sauvignon-Carmenère 2019

Certified Sustainable, Organic or Biodynamic Green Certified

Region: Chile / Colchagua Valley
Grapes: 70% Cabernet Sauvignon, 30% Carmenere

Montes Limited Selection Cabernet Sauvignon - Carmenère is sourced from Montes two estate vineyards in Apalta and Marchigüe. The Finca Apalta Estate vineyard features diverse soils with areas that are influenced by the Tinguiririca River, while other portions are influenced by mudslides and material that has fallen from the mountains above. The soils tend to be deep on the plain and thinner at the foot of the mountain and higher areas. The Cabernet Sauvignon vineyards are planted at the foot of the mountain on moderate slopes with shallow soils and highly variable textures. Carmenère vines are best suited to the flatter areas, where the soils are deeper. Marchigüe is flatter with low hills and moderate slopes. The soils are shallow—in some cases no more than 60 cm deep—with moderate clay content and a high capacity for water retention. The Cabernet Sauvignon and Carmenère vineyards are located in generally flat areas.

harvest note

The season began with a winter with mild temperatures and rainfall close to 320 mm in Apalta. Irrigation began later in the season thanks to a cool, rainy spring, which allowed us to reserve water for the summer period. In the Colchagua Valley, the summer was dry, with no rains that could harm the health of the grapes, and warm but without excesses that could damage the vines or grapes. Thanks to conditions of controlled hydric stress between fruit set and pint, the size of the berries was limited, achieving a good skin-to-pulp ratio, allowing to obtain an extraordinary color, concentration, rich tannins and very good aromas. For the red harvest, the weather was tremendously favorable, although we expected early harvests, the months of March and April were cool, which brought the phenological stages ready, allowing a harvest without problems. There were no rain events in March or April, which allowed us to wait for full phenolic maturity without the presence of diseases that affect the quality of the wine. In short, it was not a year with damaging weather events, so the health and quality of the grapes gave us clean musts with great potential. In the Colchagua Valley, maturity was reached without delay. The Carmenère ripened slowly but the expected result was achieved thanks to the long dry season typical of the Valley and ideal for this variety.

tasting note

An intense purplish-ruby red color with an expressive, perfumed nose featuring aromas of fresh red and black fruits, along with warm notes of red peppers, nutmeg, tobacco, and coffee. The palate is balanced with fresh acidity. The tannins are perfectly rounded and lend structure and volume to the wine's long finish.

food pairing

Highly recommended with stir-fried beef, pork chops, spaghetti with Bolognese sauce, and lamb chops with Cabernet-mushroom sauce.
