This grows at an east-facing vineyard at the border of Pouilly, the vines averaging 60 years old, with limestone present in the deep silt and clay soils. It’s a classical Pouilly-Fuissé, ornate with smoky soil character, as if the rocky limestone were driving its intensity. The flavors last on the floral scent of beeswax, a rich match for buttery roast Dover sole.
