Cuvée des Cadettes is not a selection made in the cellar, but a wine crafted from a unique, 20 acre vineyard planted with 85 to 100 year old vines. This Cuvée is a cofermentation of hand harvested and hand sorted grenache, syrah and mourvèdre. The cuvasion begins with cold pre-fermentation maceration lasting 12 - 24 hours. Alcoholic fermentation occurs directly after maceration with wild yeast native to the vineyard. The intensity of pumping over and punching down is defined by tasting the fermenting juice to ensure the best extraction of the berry compounds. Maceration lasts 18 to 20 days, and the wines are racked into concrete tanks for malolactic fermentation. The wine is aged 12 months in 100% small French oak barrels and blending takes place shortly before bottling.

harvest note

Fall 2007 was dry and windy but mild, with temperatures higher than usual in October and November with lot of sun thanks to Mistral blowing incessantly. Winter was also mild except for the month of March when the temperatures fell below the seasonal average. The rainfall was only 90% of the norm. However spring was rainy with thunderstorms, with temperatures higher than normal. But finally, the summer is unusually rainy and temperatures close to normal values. Mistral remains discreet. 2008v is the latest of the last 10 years - the harvest only stopped at the end of October for some estates. It was a difficult one where everything depended on the right decision of the vintner every step of the way. One can say that it was the vintner's vintage.

tasting note

Pretty deep colour, with orange highlights and a purple border. The nose is rich, with candied notes of blackberry, cherry, currant, accompanied by some roasty tones. A very nice balance on the palate, fine tannins, nice body, roundness, fat, and a lot of sweetness at the end. A wine who to be appreciated from now.
