Barricato 40 Chardonnay Trentino DOC 2015

Grapes: 100% Chardonnay
In Trentino, the difference between daytime and nighttime temperatures helps create wines that are remarkably fresh and robust in aroma and flavor. These grapes were handpicked, destemmed and given a few hours of cold maceration. The grapes were then soft pressed before vinification with selected yeasts. 85% of the cuvée underwent fermentation in temperature-controlled stainless steel tanks and 15% in new French oak barriques (hence the name Barricato) for approximately 15 days. The portion fermented in barrique was kept on the gross lees until malolactic fermentation was complete, with constant bâtonnage to enhance complexity.
The 2015 harvest has been characterised in the most part by a hot summer with limited rain fall, fortunately in the second half of August the rain became more frequent thus allowing the temperatures to mitigate. This was crucial in favouring the maturation of the bunches and the accumulation of aromas and polyphenols. The positive climatic trend continued well into September and October paving the way for a great harvest that came in different time frames as each vineyard had the opportunity to produce ripe and heathy grapes. We have all the basics in order to estimate that this vintage will deliver superb wines.
Displays fruity, fresh aromas are integrated with a touch of oak. A firmer, fresher, more European style of Chardonnay, this shows intense character of the variety, with refined white and tropical fruit, spice and vanilla notes in aromas and flavors. The texture is delicate yet ample, with a long finish marked by slightly toasty nuances.
Fried or roasted chicken, veal marsala and turkey. This wine is also an especially delicious complement to rich seafood such as lobster and scallops.

Though it has a distinctive profile, Chardonnay reflects other factors such as soil composition and vinification technique. Chardonnay is a reliable, hardy and prolific vine whose only real vulnerabilities are frost and uneven development of fruit.
